都匀毛尖冲泡的优化工艺研究

         

摘要

[目的]确定都匀毛尖冲泡的最佳工艺条件,以指导其科学的饮用和发挥最佳预防保健作用.[方法]选取液固比、冲泡温度、冲泡时间和冲泡次数为考察因素,以都匀毛尖中茶多糖的得率为评价指标,采用正交试验对其冲泡工艺进行优选.[结果]影响都匀毛尖茶多糖提取的因数顺序为:液固比>冲泡温度>冲泡时间.最优冲泡工艺参数为液固比80∶1 ml/g,冲泡温度90℃,冲泡时间10min,冲泡2次.[结论]研究得出的都匀毛尖冲泡的最优工艺经验证为科学的、合理的.%[ Objective] To confirm the optimal brewing process of Duyun Maojian, and guide its scientific drinking and make full advantage of its heaith care functions. (Method] Water-lea ratio, brewing temperature, brewing minutes and brewing times are chosen as the assessment index. Orthogonal design was used for the optimization of extraction process with the polysaccharides yield as the evaluation criteria. [ Result] The influential order of each factor on the polysaccharidea extraction from Duyun Maojian was as the following > water-tea ratio > brewing temperature > brewing time. The results show that the best brew parameters are 80: 1 ml/g of water-tea ratio and 90 X of brewing temperature for 10 min and for twice. [Conclusion]The best brewing parameters of Duyun Maojian tea are proved to be scientific and reasonable.
