花椒幼嫩茎叶营养成分研究

         

摘要

[目的]为掌握花椒幼嫩茎叶的营养价值.[方法]参照中10种常见嫩茎、叶类蔬菜及其他食物成分,测定了贵州顶坛花椒幼嫩茎叶所含的水分、蛋白质、脂肪、碳水化合物、维生素、氨基酸等成分.[结果]与10种常见嫩茎、叶类蔬菜及其他食物的成分相比,顶坛花椒幼嫩茎叶中的蛋白质、脂肪、碳水化合物和膳食纤维的含量最高,富含人体必需的矿物质元素,氨基酸组成合理,V_(B2)含量突出.[结论]花椒幼嫩茎叶为较高营养价值的理想蔬菜.%[Objective] The study aimed to master the nutritive value of tender stem and phyllome of Zanthoxylum planspinum var. dintanensis . [Method] Referenced to 10 kinds of common tender stem and leaf vegetable and the other food components in , the water, protein, fat, carbohydrate, vitamin, amino acid were determined. [Result] Compared with 10 kinds of common tender stem, leaf vegetable and the other food components, the contents of protein, fat, carbohydrate and dietary fiber reached the highest, the rich human essential mineral matters, rational amino acid composition, prominent V_(B2) in ender stem and phyllome of Zanthoxylum planspinum var. dintanensis . [Conclusion] The ender stem and phyllome of Zanthoxylum planspinum var. dintanensis , which was an ideal vegetable, has high nutritive value.
