8种常见食用油中甘油三酯组成的分析

Triacylglycerols in edible oils were separated and analyzed using liquid chromatography with charged aerosol detector.With liquid chromatography/mass spectrometry,43 triacylglycerols were identified in soybean oil.According to their equivalent carbon number,the composition of triacyglycerols in common edible oils such as soybean oil,peanut oil,canola oil,maize oil and so on were determined.Using acetonitrile and isopropanol as the mobile phase,the triacylglycerols were separated with gradient elution.Glyceryl tri-α-linolenate,glyceryl tri-γ-linolenate,Glyceryl tri linoleate,glyceryl trioleate were used as the model triacylglycerols.It was showed that the response factors of those four triacylglycerols were similar.And under the optimized conditions,the detection limits of those four triacylglycerols were 0.1 μg/mL.Therefore,with the quantification methods of area normalization,the developed analyzing methods using liquid chromatography/charged aerosol detector could provide the accurate composition of triacylglycerols,which could facilitate the differential analysis.%基于液相色谱-电雾式检测器,建立了食用油中甘油三酯的分离分析方法.借助液相色谱—质谱联用分析方法,鉴定出了大豆油中43种甘油三酯;并依据等碳数原则,确定了大豆油、花生油、菜籽油、玉米油等8种常见食用油中的甘油三酯组成.以乙腈和异丙醇为流动相,采用梯度洗脱的方式并结合电雾式检测器进行甘油三酯的分离分析.以α-亚麻酸甘油三酯、γ-亚麻酸甘油三酯、亚油酸甘油三酯及油酸甘油三酯等4种甘油三酯为模型化合物,经研究发现,4种甘油三酯在该检测器上具有类似的响应因子;另外,在信噪比(S/N =3)时,计算得到4种甘油三酯的检测限均为0.1μg/mL.基于甘油三酯的面积百分比定量研究,配备电雾式检测器的液相色谱方法能够更准确地分析甘油三酯的组成及其差异.
