不同品种花生抗氧化能力的研究

         

摘要

In order to study the different oxidation resistance between different peanut varieties with or without skin,five peanut varieties, including Xuzhou 68-4 ( pink) , Karpts ( purple), Caihei 2,Huayu 23 and Linyi Xi-aomaguo were used as research objects. The superoxide anion resistance reactivity units,the hydroxyl free radical ability, the content of hydrogen peroxide (H202) ,the CAT activity,the SOD activity and total oxidation resistance were determined. The results showed that the oxidation resistance was different significantly in different varieties and peanut skin. The superoxide anion resistance reactivity units and the hydroxyl free radical ability of peanut with skin were higher than that of peanut without skin; there were a lot of antioxidant compositions in peanut skin. The highest total oxidation resistance and superoxide anion resistance reactivity was Xuzhou 68-4 with skin, the activity of CAT in Xuzhou 68-4 without skin was the highest among different peanut varieties, and the activity of SOD in Caihei 2 was the highest among different peanut varieties;CAT and SOD were induced enzymes.%为了探讨不同花生品种带种皮和脱种皮籽仁抗氧化活性的差异,以徐州68 -4(粉红)、Krapts(紫)、莱黑2、花育23(粉红)和临沂小麻果5个花生品种为研究对象,通过对其抗超氧阴离子活性、抗羟自由基活性、过氧化氢( H2O2)含量、过氧化氢酶(CAT)活性、超氧化物岐化酶(SOD)活性及总抗氧化能力的测定,结果表明:不同花生品种之间其带种皮籽仁和脱种皮籽仁在抗氧化能力方面存在显著差异(P<0.05).带种皮的籽仁比不带种皮的籽仁其抗超氧阴离子和抑制羟自由基的能力均较高,且H2O2含量均比较低,表明花生的种皮中含有大量的抗氧化成分;带种皮的徐州68 -4籽仁总抗氧化能力和抗超氧阴离子能力明显高于其他品种,而脱种皮的徐州68 -4籽仁CAT活性明显比其他花生品种高,脱种皮的莱黑2籽仁中SOD含量为最高,表明CAT和SOD都是诱导酶.
