The effect of pesticide residues on the biochemical composition in the tea leaf and the quality of tea was discussed. The results showed that the content of tea poly phenols, saccharides, water extract was decended, but the content of amino acids, flavone was increased; the content of tea polyphenols of DDW1000 in summer decended by 11.07% , and the content of amino acids increased by 24.53%.%选用敌敌畏和天王星2种农药,研究农药残留对茶鲜叶的生化成分和毛茶品质的影响.结果表明:喷施农药后会降低鲜叶和毛茶中的茶多酚、可溶性糖、水浸出物含量,而游离氨基酸、黄酮类物质含量则相反;喷施敌敌畏1000倍液的夏季毛茶的茶多酚含量比对照降低11.07%,游离氨基酸含量比对照提高24.53%.
