猴头菇子实体、菌丝体和发酵液中提取的多糖物质含有多种生物活性物质和药理作用。本实验分别采用不同液体培养基培养猴头菇菌丝体，并对菌丝体生长量和发酵液中的多糖物质进行测量和比较。最终得出结果，以黄豆芽汁为氮源的液体培养基菌丝体生长量最高；以马铃薯为氮源的液体发酵液中多糖物质含量最高，其次是黄豆芽汁。最终的结论为，黄豆芽汁为氮源的液体培养基对猴头菇菌丝体生长量和产生多糖物质量的效果最好。%Taking different liquid medium to culture the mycelium from hericium , we measure and compare the mycelial growth and the amount of polysaccharide material in fermentative liquid .Final results show that there is the highest growth of mycelium obtained from the liquid culture medium with yellow bean sprout juice as the nitrogen source; and the highest content of polysaccharide obtained in liquid fermentative broth ..As a result, the best one is obtained from the liquid culture -medium with yellow bean sprouts juice as ni-trogen source .
