The extracting methods of volatile oil including steam distillation, adsorption, solvent extraction, mechanical pressing simultaneous distillation extraction, microwave- assisted extraction, ultrasonic-assisted extraction, supercritical fluid extraction, sub-critical water extraction, solid phase microextraction, molecular distillation, enzymes extraction, microcapsule-aqueous two-phase extraction, joint extraction and the features were reviewed in this paper in order to offer reference to the research, development and application of volatile oil.%本文主要从水蒸气蒸馏法、同时蒸馏法、吸收法、溶剂萃取法、冷压法、微波辅助萃取法、超声波辅助萃取法、超临界流体萃取法、亚临界水萃取法、固相微萃取法、分子蒸馏法、酶解辅助提取法、微胶囊一双水相萃取法及多方法联合萃取等方面综述了挥发油的提取方法及其特点，旨在为挥发油的研究、开发、应用提供一定的参考。
