以龙眼酒为研究对象,用透光率作为澄清效果指标.在单因素的基础上,选取不同澄清剂、静置时间、澄清剂的添加量为自变量,透光率值为响应值,利用Box-Behnken中心组合设计原理和响应面分析法,对龙眼酒的澄清效果进行优化.确定其最佳条件为:澄清剂选用明胶,浓度为0.9 g/L,静置时间为5 d,透光率为95.8%.%In this study, longan wine was used as the research object and light transmittance was used to evaluate the clarification ef-fects. Based on single factor test, different clarifying agents, standing time, and the adding levels of the clarifying agents were used as the variables, light transmittance used as the response value, and Box-Behnken central composite design and response surface method were applied to optimize the clarifying process as follows:adding level of gelatin was 0.9 g/L, and the standing time was 5 d. As a re-sult, the transmittance was 95.8%.
