To ensure the meat quality and safety traceability in the meat transport process, this paper designs a real-time monitoring system to achieve the safety traceability of cold meat during the transport process. In the design, it takes the cold chain temperature as the research object. The real-time monitoring system consists of wireless sensor network, ARM control er and GPRS network.%为实现冷鲜肉食品运输过程中肉品安全追溯，以冷链温度作为研究对象，以无线传感器网络( WSN)、ARM控制器和通用分组无线业务技术( GPRS)为构架，设计开发实时监控系统，实现冷链运输过程中车厢内温度数据的实时采集、远程传输、存储及查询。
