It would be very easy to become paranoid trying to educate students in the essential aspects of malting and brewing science in an American university. I gained an early hint of some of the challenges when, as a new faculty member, I was invited in 1999 to a welcome reception at the Chancellor's residence. Encouraged to visit the drinks table, I was confronted with a prominent notice that advised me that I was drinking alcohol at my own risk. Essentially, it was the warning so prominently displayed on every beer label in this country. Having got past this stage, I was pulled up a second time: there was wine in plentiful evidence but beer was receiving very much a second billing. I can understand the history that has been a forerunner to the present situation whereby alcohol on college campuses represents delicate ground. However, it still comes mighty strange to someone who was educated in the British system where the legal drinking age is 18 and beer, including that served in abundant campus bars, represents a significant feature of the average student's leisure portfolio. And just as certainly I know that there are not the same incidents of manic binge drinking with tragic end results. Yep, students can and do drink rather too many pints. They, too, frequently throw up. They don't die. They tend not to drink spirits.
