Some of you recall when the definition of chocolate was debated on a national level in the United States. The discussions identified the vast difference in chocolate and chocolate-like products and helped shape the confectionery industry today. Those were historic times. Today, we are still living in historic times. On a national scale, we are seeing legislators get more and more involved in the personal choices individuals make regarding food, snacks and candy. The FDA is sending out more inspectors than ever before while simultaneously increasing the number, size and scope of regulations for food production and food products. Bottom line, this means confectioners have to increase their work and preparation to make their food area safe.
