This year, PMCA's 65th annual production conference, which will be held April 11-13, debuts in a new venue in Lancaster, Pa. But it's Back to Basics during the first two days, with an emphasis on "processing finished chocolate into finished products." Speakers also will address a host of regulatory, sanitation, production and formulation issues during the program.
