More than a thousand French cheeses await, grouped on tables, carefully brought to room temperature. Among them massive golden Comtés, pyramids of ash-covered Valençays, large circular Brie de Meaux, and blue-veined Forme d'Ambert - specialities from every region, made from the milk of cows, goats and sheep. This was the sight that greeted the more than 400 judges queuing to get through the hallowed door, the reward after waiting 45 minutes outside the building. Two concurrent sessions of judging on Monday 27 February meant the wine judges were allowed in ahead of the dairy crowd.
