Three themes dominate the 20 research papers published in the May issue of the International Journal of Dairy Technology: dairy microbiology, cheese and fermented milks. This issue also includes a report on the British Mastitis Conference. The first paper reported the effect of spray drying on the functionality of three probi-otic lactobacilli, two of which displayed greater resistance to simulated gastrointestinal digestion. They were also associated with a significantly higher number of immunoglobulin-A producing cells in the small intestine of mice after five and 10 days, when compared to fresh cultures.
