The recent report released by the UK's Soil Association, Organic Market Report 2006, has a fair amount of good news for the organic trade, particularly if you've turned your farm to organic use. However, contained within are things that, though positive for the industry in general, may not be so favourable for the average dairy processor in the short term. While consumers want more and more organic dairy, the demand is outstripping milk supply, and this will drive up the raw materials costs for the average processor.
