The surfaces of bicontinuous disordered microemulsion structures or L3phases can be described as level cuts of random Gaussian fields with a given spectrum. Weconsider here the difference between the entropy of these states and the known entropy ofthe generating random field. In another context, this difference is equal to the decreasein the Shannon information content resulting from the process of sampling and digitisingof continuous stochastic signals.
