摘要

It is well known that arsenic pollution represents a serious threat to human health. Arsenic is widely distributed not only in the environment (mainly in soil and water) but also in some food (i.e. rice, vegetables and milk).(Beni et al., 2008). Recently, Stone (2008) highlighted the alarming issue of inorganic arsenic (iAs) contamination in food. Stone's paper suggests that a diet based on iAs-contaminated paddy rice, which is a primary aliment for half of humanity, can lead to cancer. Thus, while a single 100 mg dose of iAs may shut down energy metabolism, the chronic inges-tion of small iAs doses is even more insidious, since it may lead to neoplastic transformations. Arsenic contamination could be a serious concern especially for babies fed with rice and rice-derived foods originating from polluted areas.
