Cafeteria sales are up 10% since a renovation at Blue Cross Blue Shield here was completed. The overhaul allowed the cafeteria, now called Snaks Fifth Avenue, to modernize its 1970s' looks, become more spacious and offer more variety. "Sales are higher because we opened up the space and we got the 'wow' factor," says Vinnie Liyoti, director of foodservice. Sales have increased, he adds, because more people are visiting the cafeteria and they're spending more-the check average has increased by 10% to 12%.
