This year's new restaurant trends and concepts are more about simplifying dishes, using fewer ingredients and bringing guests back to kitchen basics. Center-of-the-plate items are based on food guests know―beef, seafood, chicken and other comfort foods. That's not to say, however, that the food is unsophisticated. Rather, it satisfies the dining public's refined palate by allowing the taste of premium ingredients to come through. Among this year's featured hot concepts is AZUR by Le Bernardin at La Quinta Resort & Club, La Quinta, California, which sells 13 types of fish and shellfish, an unprecedented number for a restaurant surrounded by desert. Lemon Garden Cafe at Shangri-La, Kuala Lumpur offers a Continental mix with a heavy focus on Italian and Asian cuisine. Several of these hotspots pay homage to site-specific flavors such as Le Park at the Park Hyatt Paris- Vendome, which emphasizes many of France's best products, including naturally churned butter, farm-fresh vegetables and beef. And Simon Kitchen & Bar at the Hard Rock Hotel and Casino, Las Vegas, offers an updated version of comfort and home-style food.
