The rapid expansion of ever more complex global food production has turned food safety from a national focus to an international concern. Ingredients and finished foods are traded globally and food safety cannot be resolved in isolation. Internationally recognised food safety certification is increasingly demanded.rnConsumers can have a huge impact both politically and financially. Their sensitivity to food safety breakdown will damage producers, whole food sectors and supplying countries as they refuse to buy a brand, a generic foodstuff or even a whole country's export range. The food chain must demonstrate at every step a high level of dedication to food safety. International markets need mutual respect and confidence in the systems used and the certainty of their application.
