1. This report examines the international retail market for bakery products and biscuits in five major countries: 1.1 France 1.2 Germany 1.3 Italy 1.4 Spain 1.5 UK 2. The period under review is 1994-1998 for current data and 1998-2003 for the future outlook of the market. 3. For the purposes of this report, the market has been broken down into two sectors: bakery products and biscuits. 4. Bakery products: comprises two subsectors: 4.1 bread: includes traditional bread, together with industrial bread (or packaged bread) such as sliced loaves, other types of bread such as wholemeal and malted, and speciality breads. The latter includes French, Italian and other international varieties such as pitta and naan; 4.2 cakes and pastries: comprise fresh and ambient cakes, single and multi-portion, and pastries, such as morning goods and packaged patisseries. The morning goods segment (viennoiseries) includes bread rolls, baps, buns, crumpets, scones, muffins, brioche in slices and individual, pains au lait/chocolat, filled specialities and croissants. Packaged patisseries includes chocolate, cream or jam-filled cakes, and individual cakes.
