The Northern Ireland dairy sector has seen a recent surge in milk markets and prices - but for reasons quite different from those that pertain in mainland Great Britain, "The Northern Ireland market only has around 1.7 million people, so 85% of our dairy output is sold outside the region and the main export has been milk powders," Dr Dobbin told Milk Industry. Put another way: around 55% of Northern Ireland's milk output is in the form of milk powder, compared with GB where the market is about 50% liquid milk. Liquid milk's share of milk processed in Northern Ireland is about 15%, with about 25% of production going into cheese making so there is a very different make up in the products that United Dairy Farmers through the wholly owned subsidiary, Dale Farm, processes and the markets it serves.
