Tim and Liz Wilson founded Yorkshire Dales ice cream in 1984, having identified a niche in the British ice cream market for a high quality dairy ice cream. Back in the 1930s Tim's grandmother had run a small dairy shop that produced homemade ice cream and this gave Tim the inspiration to create Yorkshire Dales. In 1984 dairy ice cream accounted for less than one per cent of the total market. The rest was non-dairy ice cream manufactured using vegetable oils as a substitute for dairy fats from milk, cream and butter. Non-dairy ice cream was originally manufactured after the Second World War because rationing meant there was not the quantity of dairy produce available for making luxuries such as ice cream. It was in the mid eighties when foreign brands of dairy ice cream also saw the British market as a huge opportunity and they launched massive advertising campaigns promoting their brands. These campaigns also raised the public awareness of the difference between dairy and non-dairy ice cream, helping to justify the difference in price.
