Overall, 9.9 bn eggs were sold in 1996. The retail egg market amounted to 6,162 mn eggs worth f546 mn in 1996. There are currently 31.5 mn laying hens in the UK , of which 5 mn are housed in Free range and barn/perchery conditions as approved by the RSPCA's Freedom Food organisation. Egg production is carried out on over 27,000 holdings. The battery system is the most common form of production, accounting for 86 per cent of production systems. However, sales of eggs form other production systems are growing faster an din 1996 accounted for 19 per cent of the retail and catering markets by volume and 23 per cent value.
