摘要

Many reasons exist for re-propagating a yeast culture in a brewery. Mutation, selection, and contamination can make a culture undesir- Able for use. Starting a new yeast culture in a brewery is a striaght- Forward procedure that can be done with careful technique and with Minimal equipment. Cultures are usually obtained on agar slants or Freeze dried in sterile containers. A new culture can be started direct- Ly from a slant or the freeze-dried state but a better way is to use sin- Gel-cell culture technique and select the best colonies for a production Strain.
