Reductones, a type of antioxidant, react with oxygen. Reductones prepared by maltose solutions boiled in deionized or tap water were detected by methylene blue or methyl red decolourising. Dye reduc- tion is strongly inhibited by oxygen from air. The boilin of the mal- tose in deionize water provided only a small amount of reductones in comparison to tap water, which is probably a consequence of high- er pH values as well as trace metals (e.g. Cu, Fe ions) in the tap water.
