Those of us who tackle the weekly chore of grocery shopping are well versed in store layout: Round the final aisle, the temperature drops a good twenty degrees and you are in dairy-land, a quick breeze through the commodity aisle, picking up butter, milk, eggs, cheese—maybe a little ice cream—and you're on your way. At least that's the way it used to be. Well, attention shoppers, but a lot has changed in the dairy " section" of the store, and healthy profits are being made from increasingly specialized items that bear little resemblance to yesteryear's commodities.
