A favorite of vegetarians for years, soy-foods merged increasingly into diets of L mainstream consumers over the past two decades. The past five years saw a healthy jump in soyfoods consumption following increased availability, and intense marketing of, soy milk and soy milk-containing beverages and the American debut of edamame -steamed green soybeans in the pod. Women, in particular, embraced soyfoods for their possible effects on menopausal symptoms. Nearly everyone is now aware these foods possess some impressive health benefits. . At the heart of the soy health story are isoflavones. Isoflavones' chemical structure makes them dose cousins to the hormone estrogen - and they are, in fact, members of a group of compounds called phytoestrogens or "plant estrogens." But isoflavones are distinctly different in important ways, often stimulating opposite effects from estrogen. As the health benefits of isoflavones become more apparent, industry is isolating these compounds from soybeans to make them available as supplements and as additives to other foods.
