This review is mainly of North American literature on the bison, but also includes information on the experimental rearing of American bison in France by the Institut National de Recherche Agronomique. Bison can be adapted to French farming conditions. They do not become aggressive unless unduly restrained. Their dietary requirements are similar to those of cattle. Although females can calve throughout the year, breeding tends to be seasonal. Mating takes place mainly in August. The 1st calving takes place at approximately 3 years of age, and females can be mated to calve annually. Pregnancy lasts 270 days. Birth weight averages 25 kg for females and 30 kg for males. Calves gain approximately 600 g daily until weaning at 7 months. The body weightof adult males and females is 700-800 and 450-500 kg respectively. Bison meat is attractive to the French consumer. The market in France requires a carcass of 250-300 kg, and this can be produced from bison slaughtered at 2.5-3 years of age, after finishing on a concentrate diet, on which an average daily gain of 800 g is achieved.
