摘要

Use of a tank withering technique in the processing of plain black tea was com-- pared with the two-stage withering method. Tank withering resulted in black teas with slightly more theaflavins, colour and thearubigins but low flavour indices. The black teas did not differ in sensory evaluation. Thus, tank withering could be a useful method in the manufacture of plain black tea.
