摘要

V. doniana is a tree which grows wild in Nigeria and its fruits are eaten to some extent. To increase its utilization, jam was prepared from fruits. Sensory evaluation showed no significant difference in flavour, colour and overall acceptability between this jam and a commercial plum jam. V. doniana jam was preferred for consistency and spreadability.
