Humans have been using microorganisms for mil-lennia.Tiny, single-cell living organisms like yeast and bacteria are essential to produce food products like wine, beer and cheese. Only in the 20th century, however, did the industrial application of these microscopic powerhouses take off. Greater understanding of biological processes, thanks in large part to Watson and Crick's work on DNA, paved the way for the development of revolutionary techniques such as genetic engineering, enabling scientists to manipulate microorganisms in spectacular new ways, to enormous social benefit.
