A healthier alternative to artery-clogging trans fats has been developed by food scientists. In December 2006,New York City health officials voted to ban the artificial trans fatty acids which are found in many fried foods.Trans fats are partially hydrogenated vegetable oils that are used to structure liquid oils, making them solid and fat-like.The fats extend the shelf-life of foods, but have no nutritional value, and cutting them out of the diet can reduce the risk of heart disease.
