Nutritional and process parameters that influenced lactic acid production by Lactobacillus casei adsorbed onto Poraver beads in a recycle batch reactor system, were investigated. The presence of lactose, even as a minor proportion of total sugars, was necessary for complete utilization for growth and conversion to lactate. Hydrolysed whey protein was a richer source of nitrogen than was yeast extract. Addition of lactate to the medium at the start of the process caused severe inhibition. Optimal pHfor the fermentation process was 6.0, and the overall productivity of the recycle system under all conditions studied was greater than that obtained with a batch process using free cells. Enhancement of lactic acid production in the recycle process wasaccompanied by an increase in density of suspended cells, but the number of suspended cells did not affect overall productivity of the reactor. Bead size of the matrix was found to be important for operational stability of the reactor.
