摘要

The polymerization of flavan-3-ol units, as profisetidin, prorobinetidin, procyanidin and prodelphinidin (Fig. 1), yields condensed tannins (proanthocyanidins). These compounds are present in many plants and foods and are attracting more attention because of their biological, nutritional and physiological properties,[1,2] including the complex formation with proteins, polysaccharides and metals.[2-5] Some biological properties of tannins are related with the polymerization degree and structures,[2] which explain the necessity of the identification of tannins. Besides, tannin extracts are used industrially, such as in wood adhesives,[6] cationic dyes in dyestuff industry and to clarify the products (juices, wine and others) in food industry.[7]
