As highlighted elsewhere in this issue of C&CI, the bean to bar market is growing rapidly, albeit from a small base, as more and more consumers come to appreciate just how exceptional high quality chocolate, made with top quality cocoa, can be. Mr Harcourt-Cooze has been at the forefront of the market in the UK for a number of years, and spoke to C&CI about how and where he sources the high quality cocoa he buys, and how the bean to bar model works for farmers.
