Investigations of the total antioxidant capacity (CAT) of various fruits using the TEAC (Trolox equivalent antioxidant capacity) method has confirmed the pre-eminent CAT of small fruits (raspberry, strawberry, wild strawberry and blueberry) as compared to peaches, apricots, apples, cherries and kiwifruit. A chart shows the antioxidant potential and total polyphenols of 16 strawberry varieties. Given that antioxidants offer protection against cardio-vascular diseases and cancer, it is suggested that when testing the nutritional value of fruit, the antioxidant levels be taken into account.
