Chile has focused 99% of its fruit production towards exports. It is common knowledge that the big demand for food comes from the Northern Hemisphere, with traditional markets like the United States and Europe and now the emerging markets in Asia andEastern Europe. This demand is satisfied by its own domestic production during the season and outside the season by production in the Southern Hemisphere (Table 1).
