摘要

With great interest we read the recent article by Vally et al. [1] in which the clinical effects caused by sulphite additives were reviewed. After enteral or parenteral exposure to foods and drinks containing these additives as preservatives and antioxidants, symptoms may range from skin reactions like dermatitis and urticaria to abdominal pain and diarrhoea or even to life-threatening anaphylactic and asthmatic reactions. Although several aspects have been discussed in their article, the precise mechanisms underlying sulphite sensitivity remained unclear, and we missed a discussion of the effects that sulphites may exert on immune response and on immu-noregulatory cytokine patterns.
