Copoazu is a drupe berry native from the Amazon region. Is a cultivated specie and all the fruit parts have different uses; food products are obtained from pulp and seeds and bark can be used in gasification and compost. New applications offer an alternative for wide use and potential consumers of the value chain, different from food sectors. Copoazu seeds are an important fruit fraction (~20%) and have a high fat content (~50%) with potential uses in cosmetic, pharmaceutical and food industries. Being a close relative of the cocoa is used in a similar way, by fermentation, roasting, grinding and extraction to get the fat which by its nature, resembles cocoa butter. Microwave assisted extraction (MAE) is a relatively novel technique that offers environmental benefits such as lower solvent quantities, reduced energy consumption, less toxic solvent use and lower waste production, while allowing for more selective and fast extractions with similar or better recuperation than conventional techniques. This study was carried out with the aim to perform an initial approximation to establish a MAE protocol for fat extraction from Colombian Amazon copoazu seeds. Operation conditions such as matrix moisture, power and microwave exposure time were evaluated with a surface response methodology. Fat yield, fatty acids profile and pictures from extraction residue by scan electronic microscopy were obtained and a comparison between MAE, press and Soxhlet was performed. It was found that MAE extracts have a better fat quality with a higher quantity of unsaturated fatty acids, although the average production was lower than solvents extraction (39 vs. 45%). On the other hand, it is necessary to make improvements to the procedure and prototype of MAE extractions in order to make the average production technology more competitive with more processed volume.
