The moment in January that I heard Elisabeth Hagen was to be nominated by President Obama as the next food safety undersecretary at USDA, I put in my request for a face-toface interview. The four-year scientist at FSIS, Harvard graduate and mother of two young children is facing a lot of big decisions in her new job, ranging from petitions to declare non-O 157 strains of E. coli as adulterants to interpreting HACCP validation guidelines for meat processors.
