Milling wheat proteins are slipping back. A nitrogen top-up should ensure you don't miss out on healthy premiums this harvest. If any season is going to justify a late dose of extra nitrogen on milling wheats, then this is the one. With a wheat supply shortage in prospect, milling premiums are looking promising; 20-25 pound/t seems likely, says Peter Dampney of ADAS Boxworth. "You can't afford to put this premiurn potential at risk, so focus attention on boosting grain proteins." The target for milling varieties is the 13 percent mark, calculated on the new 100 percent dry matter system. This is equivalent to 11 percent protein in the old nomenclature. The Group 1 top breadmaking wheats may need some help. Proteins have been on the slide over the past few years, says Mr Dampney. "It's mainly due to increasing yields, which has diluted the protein content." Higher performance varieties and the use of strobs would appear to contribute.
