摘要

During the last decades, the relatively young discipline of predictive microbiology gains more and more importance in food processing industry, as it shows to be an excellent tool in the development of Hazard Analysis Critical Control Points (HACCP) programs. In this context the accurate modelling of inactivation dynamics of populations of pathogens or spoiling microorganisms by stress factors, such as high temperature, is extremely important. Part of the accurate modelling is the reliable estimation of the model parameters based on experimental data. In order to obtain high quality estimates - quantified by means of accuracy, correlation factors, confidence regions- the experimental data must be rich enough in information content.
