Casks made from 4 Brazilian woods were compared with oak casks for their impact on cachaca during ageing and storage. Changes in levels of phenolic compounds and furfuraldehyde, as well as antioxidative activity, were monitored during storage (0-18 months) of non-aged cachaca and active aging of cachaca in 20 l casks made from 4 Brazilian wood species: white peroba (Paratecomaperoba); balsamo (Myroxylon balsamum); timborana (Piptadenia sp.); and jaboty (Erismauncinatum). Samples were also stored in white oak (Quercus sp.) barrels. Phenols found in aged cachaca after 18 months of aging included: white peroba (gallic acid, vanillic acid, vanillin, syringic acid, syringaldehyde and coumarin); balsamo (gallic acid, vanillic acid, vanillin, syringic acid, syringaldehyde and coumarin); timborana (gallic acid, vanillic acid, vanillin and coumarin); and jaboty (gallic acid and vanillin). Cachaca stored in white oak barrels contained gallic acid, vanillic acid, vanillin, syringic acid and syringaldehyde. Significant correlation was observed between antioxidative activity and total phenols contents, both of which increased with increasing aging time. Results suggest that balsam, followed by white peroba and timborana would be the best Brazilian wood substitutes for oak casks, because cachacas aged in them demonstrated higher antioxidative activities and total phenols contents, as well as and more complex phenolic profiles, with degradation of 2-furfuraldehyde
