Frmers in Kentucky, and many other states, are looking for alternatives to traditional agricultural crops. Aquaculture has become an attractive option for many U.S. producers wishing to diversify their crop and income base. Currently, the Australian red claw crayfish (Cheraxquadricarinatus) has received attention as an aquaculture species in some states in the U.S. (including Kentucky) and is commercially-cultured in several countries (China, Mexico, and Australia). It has been shown that red claw possess many favorable traits essential for profitability. Red claw can grow to a size of 100 g (3.5 oz.) in a 4-to-6-month growing season, making them larger than the most-commonly cultured crayfish in North America, the red swampcrayfish (Procambarus clarkii), which attains an average weight of between 20-35 g. Further, while the red swamp crayfish has a tail meat yield of between 15-20%, red claw tail meat yield is approximately 30%. Marketing studies have indicated that red claw are highly-desired because theyare larger than shrimp or prawn, have excellent storage quality, and are quite delicious. This has allowed farmers to get between 8 dollar to 16 dollar per kg for a 50- to 90-g red claw in an established marketplace. Since there is no post-hatch larval phase, there is no requirement for larval culture as found for some other crustacean species, which allows farmers the possibility of being able to spawn their own broodstock for pond stocking.
