Here is a bit of background for my readers. I began my teaching and research career in the early 1960s at the University of Washington, School of Fisheries (now renamed the School of Aquatic and Fishery Sciences). In those days, we referenced the scientific name of the small, deep-cupped Kumamoto oyster grown in the Ariake Sea area at the southern island of Kyushu, Japan as iCrassostrea gigas (variety Kumamoto). In the early half of the last century, C. gigas was used generally to describe varieties which show similar morphological/anatomical features, regardless of geographic location or size. With moving technologies of electrophoretic protein analysis and mitochondria DNA techniques coming into the picture the last two to three decades, differences were identified and new scientific names were given -- such as renaming the Kumamoto oyster as iCrassostrea sikamea (referred to as kumos in the rest of this column). This oyster is now the highly desired most expensive oyster on the west coast, with retail sales pricing generally around $13 per dozen, as compared to $7 per dozen of regular Pacific Oyster (iC. gigas). After talking to several growers, annual production of Kumos may be around 5 million now.
