The use of milk products in ice cream in the UK is governed by legal requirements and the way in which these are interpreted. Sources of fat, and of milk‐solids‐not‐fat in concentrated form, are considered. After basic legal requirements have been met. whey powders or concentrates can provide additional protein. Lactose and whey syrups can also be used as sweeteners.
