摘要

Defective samples of soft cheese packaged in decorative material from 2 Danish dairies were examined for yeasts. 18 yeast species were isolated. Torulaspora delbrueckii, Candida parapsilosis, Pichia fermentans, P. norvegensis and P. membranaefacienswere the most common from Dairy A, and Debaryomyces hansenii, P. guilliermondii, Cryptococcus and Rhodotorula were the most common from B. Yeasts in A were caused by recontamination from the processing area and yeasts from B were associated with the packaging.
