Nutritionists and producers should consider the differences between fermented yeast culture and viable yeast products when deciding which product to feed to dairy cattle. The fundamental differences between them can affect performance and efficacy ofthe products. Yeast culture and live yeast often are included in ruminant feeds as a rumen stimulant or modulator. They may also play a significant role in pig and poultry feed. Yet these types of products do have differences. While several hundred different species of yeast exist throughout the world, the species Saccharomyces cerevisiae, also known as bakers yeast, is the one commonly used in dietary yeast culture products.
