摘要

In the last ten years the main innovation in fruit and vegetable puree processing (Fig.1) is cold extraction, a new system to crush and refine the fruit before heat inactivation and final refining. We propose the following definition of cold extraction Crushing and refining method consisting of partial removing of peels, stems and seeds at ambient temperature in a single or in two separate machines. Crushing and separation can be done in a separate mill followed by a turbo extractor (traditional coldextraction) or in an integrated extractor (actual status of cold extraction).
